Tomato Soup
Ingredients
- 2 tbsp Oil
- 2 tbsp Butter
- 1 Small Onion
- 2 Celery Sticks
- 2.5 lbs tomatoes
- 5–6 Cloves Garlic
- 8 Cups Chicken or Vegetable Stock
- 1 tsp Salt
- 1 tsp Black Pepper
- ½ tsp Cayenne
- ½ tsp Paprika
- Sugar if the soup is too sour
- Tomato Paste if you want to get more tomato-y taste
Instructions
- Roughly cut vegetables
- Pour oil in a pan
- Add celery and onion
- Add sea salt
- Sauté for 5–7 minutes
- Add garlic cook 1–2 minutes (do not brown)
- Add chicken stock and tomatoes
- Let it simmer when it starts to reduce add black pepper, cayenne and paprika
- Blend the whole mixture
- Give it a taste
- Adjust seasoning according to your likeness
- If it is very sour add sugar
- If your tomatoes were not red enough and you want red color in soup, add some tomato paste
- To get homogeneous texture run it through a mesh strainer
- Use a spatula to get most of the soup out only left with fiber
- Transfer it back to pan
- Add butter and let it simmer until it reaches your required consistency
- Drizzle sour cream and basil on top
- Serve with grilled cheese sandwich
