Turkish Recipes — Seekh Kebab with Aromatic Rice and Salad — Zebra Rice

Ingredients for Seekh kebab:

3 lbs Ground Beef

3 tbsp Butter (If ground beef does not have fat)

2 tbsp Flour

1 Onion

Handful Cilantro

2 large Green Chili

1 tbsp Salt

1 tbsp Freshly Ground Black Pepper

1 tsp Chili Flakes

1 tsp Toasted Coriander Seeds (Bhuna Kuta Dhaniya kay Beej)

1 tsp Toasted Cumin Seeds (Bhuna Kuta Zeera)

1 tsp Chaat Masala

1 tbsp Amchur Powder

Ingredients for Aromatic Rice:

1 cup Zebra Basmati Rice


1 tsp Salt

1 Black Cardamom

1 Cinnamon stick

4 Cloves (optional)

1 Star anise (optional)


1. Soak Zebra Basmati Rice for 30 minutes

2. In the meanwhile start prepping for seekh Kebab

3. Chop onion finely and squeeze out as much of the water as you can.

4. Add Finely chopped cilantro and green chilies

5. Mix ground beef, onion, green chilies, cilantro, spices and flour

6. Toasting Cumin and Coriander seeds is one of the key to give Seekh Kababs smokiness

7. 80/20 is Ideal Meat for Seekh Kebab But if you don’t have 20% fat in it, you can add Butter or Ghee

8. If you are not grilling it, Smoke the mixture with coal to give it BBQ aroma

For Coal Smoke:

Burn the coal for 8–10 Minutes

Place coal on an aluminum foil piece resting in the middle of Seekh Kebab mixture

Pour Butter or Desi Ghee

Cover for 5 Minute JUST 5 MINUTES

9. You can Grill it, Cook it on Tawa/ Griddle or Bake It

10. While Seekh kebabs are cooking, drain the water from rice

11. In a pan add 2 cups of water, 1 cup of soaked rice, 1 tsp Salt, 1 Black Cardamom, 1 cinnamon stick, 4 cloves and 1 star anise.

12. Let it cook until water evaporates and rice are fully cooked.

13. Cover and let it rest on lowest heat for 5 minutes.

14. Serve with fresh salad and Seekh kebabs
